Depuis 1950, sa culture pr\u00e9sente un attrait mondial.<\/p>\n<p style=\"text-align: justify;\">Il en existe trois types, les plus connus, <strong>le soja vert et le soja jaune<\/strong>, et le soja rouge ou azuki, moins courant, mais qui comme les deux autres est originaire du centre de la Chine et de la Cor\u00e9e.<\/p>\n<p style=\"text-align: justify;\">Cet aliment v\u00e9g\u00e9tal se distingue par sa <strong>haute teneur en prot\u00e9ines<\/strong> de bonne qualit\u00e9,<strong> sup\u00e9rieure \u00e0 celle des viandes<\/strong> habituellement consomm\u00e9es.<\/p>\n<p style=\"text-align: justify;\">En consommant 100 grammes de soja, notre apport en prot\u00e9ines est de 34,74 grammes, tandis qu\u2019avec 100 grammes de b\u0153uf, l\u2019apport en prot\u00e9ines est de 20 grammes seulement. La consommation de soja prend donc une importance particuli\u00e8re dans les r\u00e9gimes v\u00e9g\u00e9tariens, que ce soit sous la forme de l\u00e9gumineuse, de germe, de fromage (tofu), dans de l\u2019huile ou dans du lait.<\/p>\n<p style=\"text-align: justify;\">La graine de la plante ou graine de soja contient une <strong>hormone oestrog\u00e8ne-like<\/strong>, tr\u00e8s utile chez les femmes en <strong>m\u00e9nopause<\/strong> et chez les hommes en andropause.<\/p>\n<p style=\"text-align: justify;\">\u00c0 cette \u00e9tape de la vie, le corps cesse de produire des \u0153strog\u00e8nes en quantit\u00e9 importante, le soja contribuant \u00e0 compenser cette carence de fa\u00e7on naturelle.<\/p>\n<p style=\"text-align: justify;\">\u00a0Il est \u00e9galement conseill\u00e9 d\u2019effectuer un <a href=\"http:\/\/www.kinepharma.es\/fr\/kits-test-de-diagnostic\/127-test-du-systeme-endocrinien-elargi.html?search_query=Test+du+systeme+endocrinien&amp;results=4\" target=\"_blank\"><strong>Test du syst\u00e8me endocrinien<\/strong><\/a>\u00a0afin de v\u00e9rifier et de parvenir \u00e0 r\u00e9guler ces d\u00e9s\u00e9quilibres hormonaux qui engendrent un certain mal-\u00eatre, notamment chez la femme.<\/p>\n<p style=\"text-align: justify;\">Un autre grand avantage du soja est sa <strong>haute teneur en fibres<\/strong>. Pour chaque 100 grammes de soja consomm\u00e9s, l\u2019apport en fibres est de 20 grammes. \u00c0 cet \u00e9gard, il s\u2019agit d\u2019un alli\u00e9 de poids dans de nombreux troubles de la sant\u00e9 :<\/p>\n<ul style=\"text-align: justify;\">\n<li>L\u2019apport \u00e9lev\u00e9 en fibres contribue \u00e0 pr\u00e9venir ou \u00e0 renverser la <strong>constipation<\/strong>.<\/li>\n<li>Il ralentit le passage du glucose ou du sucre dans le sang, ne provoquant pas de pics de glucose \u00e0 l\u2019origine d\u2019un d\u00e9r\u00e8glement du taux de glucose chez les diab\u00e9tiques. Il s\u2019agit donc d\u2019un aliment particuli\u00e8rement recommand\u00e9 dans le traitement du <strong>diab\u00e8te<\/strong>.<\/li>\n<li>Il r\u00e9duit le taux de cholest\u00e9rol et pr\u00e9vient l\u2019<strong>ath\u00e9roscl\u00e9rose<\/strong>.<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">De par sa teneur en <strong>isoflavones<\/strong>, le soja est un aliment <strong>cardioprotecteur<\/strong>. Il est riche en<strong> acides gras polyinsatur\u00e9s<\/strong>, autrement dit, en bonnes graisses. La consommation d\u2019huile de soja est recommand\u00e9e d\u00e8s 40 ans. En effet, elle a des effets b\u00e9n\u00e9fiques contre l\u2019hypercholest\u00e9rol\u00e9mie, l\u2019ath\u00e9romatose, l\u2019art\u00e9rioscl\u00e9rose, l\u2019hypertension art\u00e9rielle, les troubles circulatoires et l\u2019hyperuric\u00e9mie.<\/p>\n<p style=\"text-align: justify;\"><a href=\"https:\/\/kinepharma.es\/blog\/wp-content\/uploads\/2015\/10\/queso-de-soja-tofu.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-4956\" title=\"le tofu\" src=\"https:\/\/kinepharma.es\/blog\/wp-content\/uploads\/2015\/10\/queso-de-soja-tofu-1024x682.jpg\" alt=\"le tofu\" width=\"624\" height=\"382\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">Apr\u00e8s l\u2019\u0153uf et le s\u00e9same, le soja est l\u2019aliment le plus <strong>riche en l\u00e9cithine<\/strong>. En 1952, il a \u00e9t\u00e9 d\u00e9couvert que la l\u00e9cithine encourageait consid\u00e9rablement la gu\u00e9rison des l\u00e9sions c\u00e9r\u00e9brales. Elle est aujourd\u2019hui utilis\u00e9e efficacement et avec succ\u00e8s dans les <strong>troubles cardiovasculaires<\/strong> et du <strong>syst\u00e8me nerveux<\/strong>. Elle participe \u00e9galement au <strong>nettoyage du foie<\/strong> et \u00e0 la <strong>purification des reins<\/strong>.<\/p>\n<p style=\"text-align: justify;\">Avec 23,5 % d\u2019hydrates de carbone, le soja est particuli\u00e8rement recommand\u00e9 chez les diab\u00e9tiques ou les personnes ob\u00e8ses.<\/p>\n<p style=\"text-align: justify;\">Il est riche en <strong>min\u00e9raux alcalinisants <\/strong>tels que le potassium, le phosphore, le calcium, le magn\u00e9sium, le fer, le soufre, le fluor, le cuivre et le zinc.<\/p>\n<p style=\"text-align: justify;\">En outre, il assure un apport consid\u00e9rable en vitamines, \u00e9tant<strong> riche en vitamines A, B, E, D et K<\/strong>, sa consommation \u00e9tant particuli\u00e8rement recommand\u00e9e chez les femmes enceintes, pour la croissance, en cas d\u2019h\u00e9morragies, chez les patients atteints de diarrh\u00e9e chronique ou chez les malades h\u00e9patiques.<\/p>\n<p style=\"text-align: justify;\">De par sa <strong>faible teneur en sodium et en chlore<\/strong>, le soja est un bon alli\u00e9 dans les r\u00e9gimes sans sel. D\u2019autre part, il a une faible teneur en amidon, ne contient ni gluten, ni lactose, faisant de lui un aliment autoris\u00e9 chez les personnes intol\u00e9rantes au gluten ou au lactose.<\/p>\n<p style=\"text-align: justify;\">Il convient de mentionner que les graines de soja sont difficiles \u00e0 dig\u00e9rer, autrement dit, elles sont longues \u00e0 dig\u00e9rer, pouvant ainsi provoquer des flatulences. Ce petit inconv\u00e9nient n\u2019est pas propre au soja, mais est typique \u00e0 toutes les l\u00e9gumineuses et est d\u00fb \u00e0 sa<strong> pellicule cellulosique<\/strong>.<\/p>\n<p style=\"text-align: justify;\">Nous recommandons donc de les laisser tremper avant leur cuisson afin de les ramollir l\u00e9g\u00e8rement, puis de les cuire de fa\u00e7on appropri\u00e9e.
